Summer is the time for fast, easy and light food. We have gathered together some of our favorite summer food recipes.

Orange Smoothie 

Great frozen drink for a hot afternoon.

Ingredients:

1 small can orange juice                         9 oz water

 9 oz milk                                              ¼ cup sugar

1 teaspoon vanilla                                  6-8 ice cubes

Instructions: Blend all together in a blender

 

Watermelon Balls


  

Instructions: Take a watermelon cut it in half. Once the watermelon is in half take a small scoop and make balls. These are really fun for your kids to help you make. They are also the perfect bite size pieces. Use them plain or add other fruits to make a fruit bowl.

 

 

 

 

 

 

Homemade Popsicles


  

Instructions: You can use any liquid you want we used juice and put them in these fun little containers. Once you pour the liquid in put in the freezer for a couple of hours. Once frozen everyone can enjoy.

 

 

 

 

 

 

 

No Bake Cookies

 

These are fun and easy to make. Let the kids help.

Ingredients and Instructions: Mix together in a large bowl. 3 cups rolled oats (uncooked oatmeal) 2 teaspoon cocoa Mix together in a large sauce pan. ½ cup milk 2 cups sugar 1 cube butter 1 teaspoon vanilla Pinch of salt Bring to a boil and boil 1 ½ minutes and pour over dry mix and stir well. With a tablespoon, spoon onto wax paper. Let set and then ENJOY!

 

Peanut Butter Fingers-Our Family Favorite


  

Ingredients:

1 cup butter, melted                 1 cup sugar                      

1 cup brown sugar

2 eggs 1 cup peanut butter        2 teaspoon vanilla            

½ teaspoon salt

2 cup flour                              2 cups uncooked oatmeal   

1 teaspoon soda

Instructions: Cream butter and sugars together. Add eggs, peanut butter and vanilla. Add the dry ingredients in order listed. Spread on lightly greased cookie sheet. Bake at 350 degrees for 12-15 minutes. Cool and spread with a layer of peanut butter. (I like to use extra chunky) Frost with chocolate frosting.

Chocolate Frosting

2 cups powdered sugar 2 tablespoons melted butter 2 tablespoons cocoa Mix and add milk until consistence of frosting. Frost peanut butter bars.

 

Tri Pasta Italian Salad


  
 

We love this salad as a side dish for grilling or a light lunch.

Ingredients and Instructions: 2 eight ounce package of three flavored curly pasta Cook in a 6 cups of boiling water, 1 tablespoon on oil and 1 teaspoon salt for 12 minutes. Drain, rinse and let cool 1 medium onion finely diced 1 medium green bell pepper, diced 1 can large can large black olives, sliced 1 8 oz package sliced pepperoni 4 oz crumbed Feta Cheese 1 cucumber, peeled quartered and sliced Combine all ingredients add Italian dressing until moist. 8-12 ounces
